What’s On The Menu This Week? w/c October 29th

Happy Monday!  After taking a little break last week due to the kids being off for their half-term holiday, it’s time for another What’s On The Menu This Week. I decided not to meal plan last week as even though we didn’t have any big plans for the half term break I wanted us to have a relaxed few days when it came to choosing what to have for dinner.

But, however nice it was to take each day as it comes I have to admit that I am glad to have a bit more structure and routine in place again. 

Here’s what’s on the menu this week…

Monday – Roasted chicken thighs, roasted rainbow carrots, green beans and potatoes

Tuesday – Egg and beans on toast

Wednesday – Creamy pumpkin and lentil soup

Thursday – Slow cooker macaroni cheese

Friday – Pizza and wedges

Saturday – Out for dinner

Sunday – Roast chicken and trimmings

I’m trying to cut back on the amount of meat we eat, not just for health and environmental reasons (although those are the most important) but also for financial reasons too. I’ve gotten into the habit of having meat with almost every meal we have – purely out of laziness and convenience as I know what the kids will eat without too much fuss – but I know that I can save more money by reducing our meat intake a bit. 

Cutting back on meat also gives me an excuse to spend time going through my cookery books again (pretty much my favourite thing to do on a chilly day!) to find some new recipes to make. If you have any meat-free family favourite recipes please do let me know – I’m always keen to try new ones.

    Ahh! Egg and beans on toast is such a simple meal but it’s so good! I quite fancy it for lunch now you’ve mentioned it.

    we always have at least one veggie and one fish dish a week if not more. Your meal plan sounds lovely and the idea of slow cooker maccaroni and cheese i need to look up

      The slow cooker macaroni cheese recipe is from the My Fussy Eater website. I haven’t made it before so I’m hoping it turns out okay! 🙂
