I’m writing this week’s ‘What’s on the menu this week?’ meal plan post while curled up on the sofa hiding away from the horrible rainy weather outside. I might have just gone into full-on comfort food mode and had leftovers from yesterdays Sunday roast for my lunch. Let’s be honest, on day’s like this there isn’t much that beats scorching hot roast potatoes dipped in gravy, is there?
Anyway, enough about comfort food here’s this week’s meal plan.
What’s on the Menu This Week w/c October 15th
Monday – Fajitas – We didn’t get round to having these on Friday, despite having all the ingredients in the house so we are having them this evening instead.
Tuesday – Jacket potato and prawn salad
Wednesday – Sausagne – Everyone in the house loves lasagne, except G as she really dislikes mince. She does, however, love sausages and I saw this lasagne variation in the new Jack Monroe book, Cooking on a Bootstrap (which is fantastic by the way!) I’m excited to give this recipe a try.
Thursday – Slow Cooker Carrot & Coriander Soup – cheap (about 20p per portion), cheerful and really yummy. Obviously, there will be crusty rolls smothered in butter to go with it.
Friday – Homemade pizza and wedges
Saturday – Lewis salad. Lewis salad is what we call our regular Saturday night buffet dinner which we eat while watching Strictly Come Dancing with the kids. It actually contains very little salad.
Sunday – we have guests coming for lunch this Sunday so right now my plan is to cook Roast beef and all the trimmings.
