Slow Cooker Carrot & Coriander Soup

Soup, glorious soup! I love a big bowl of soup, especially at this time of year. There’s something so comforting about eating out of a bowl, don’t you think? And then to dunk a big chunk of buttery bread into the bowl. It’s all the noms, basically. This Slow Cooker Carrot & Coriander Soup recipe is one of my favourites for three reasons. Firstly – it’s delicious, secondly, it’s so damn easy to make and, thirdly, it’s cheap as chips.

I use my slow cooker as often as possible, especially during the winter when it really comes into its own. To be able to bung all the ingredients in the slow cooker in the morning, knowing that I don’t have to think about it until it’s time to serve is a Godsend. But at the moment, because I’m trying to shift some weight, I always make a soup in the slow cooker on a Sunday for the week ahead. I make enough to last a few days lunches for me, and also for hubs who takes it into work.

This week I’m making a veggie and butter bean soup, but last week it was Slow Cooker Carrot & Coriander Soup. Here’s the recipe if you fancy giving it a try:

 Prep Time 10 Minutes


 Cook Time 8 Hours
 Servings  Generous bowls


  • 2 medium onions
  • 1 kg carrots
  • 3 medium white potatoes
  • 2 tsp ground coriander
  • 2 Ltrs chicken or vegetable stock
  • salt and pepper
  • 1/2 bunch coriander plus extra leaves to garnish


  1. Peel and roughly chop the onions and carrots
  2. Add to the slow cooker
  3. Peel potatoes and cut into quarters
  4. Add to the slow cooker
  5. Add Ground Coriander


  1. Pour in Stock
  2. Place lid on slow cooker and cook for 8 hours on low or 3-4 hours on high.
  3. When cooked add the 1/2 bunch of coriander and blend with either a hand blender or food processor
  4. Check for seasoning and add salt and pepper as required
  5. To serve, pour into bowls and garnish with a few coriander leaves



Based on Sainsbury’s prices this Slow Cooker Carrot & Coriander Soup cost around £1.60 for the ingredients, and yielded 8 generous portions – so 20p per portion.

The soup can also be frozen easily.
