Meal planning has become an essential part of my week. In fact, I used to regularly share my weekly meal plans on here. I’m not really sure why I stopped doing so, as they were always well received, but I thought I would start writing them again.
I find that if I don’t have a meal plan in place then when it comes to dinner time I’m stressed out trying to rustle something up that everyone will eat, and more often than not I will go wildly over budget when doing the food shop. So meal planning not only saves my sanity it also saves me from going, unwittingly, overdrawn.
Here’s what’s on the menu this week:
Monday: Sausage and mash
Tuesday: Slow cooker spaghetti bolognese
Wednesday: Slow cooker chicken cacciatore
Thursday: Chicken tray bake
Saturday: Out for dinner
Sunday: Baked gammon, roast potatoes, and veggies.
I try to use my slow cooker at least once or twice a month throughout spring and summer, but find that come autumn and winter I start using it more often – at least once or twice a week. It’s so nice to be able to pop the ingredients for dinner into it first thing in the morning and know that you can just let it work its magic throughout the day, and a delicious comforting meal will be ready for you in the evening. My Chicken Cacciatore recipe is perfect for a mid-week autumn dinner and, oddly enough, it’s something that my two super fussy eaters will happily tuck into too!
