This month on the blog I am focusing on food. If you saw my last blog post you will know that Norfolk & Suffolk County Councils have set me a challenge to see how well I can reduce our food waste over the course of the month.
Regular readers will know that I am a keen meal planner, and I was joining in with Katy Kicker’s meal plan linky up until last Christmas. I took a bit of a hiatus from publishing meal plans in January, but as I am undertaking this challenge this seems like a perfect time to start up again.
I’m trying to incorporate one or two new (to me) Slimming World recipes into our meal plan each week. I haven’t rejoined Slimming World but am trying to follow it’s principles as best I can without going to a group.
We (Rob and I) have really liked the majority of the recipes we’ve tried from official Slimming World recipe books – the Comfort Collection cookbook* and the Curry Club cookbook are both excellent and I cook recipes from them often.
Anyway, enough waffle. Here’s our meal plan for the week ahead.
Monday – Tandoori Fish & Sag Aloo (Slimming World recipe) – we had this earlier this evening and it was so very good. Absolutely nothing was wasted.
Tuesday – Speedy Hoppin’ John – (Slimming World recipe with a bizarre name!) I think this is a Creole type dish with ham hock, rice, and veg.
Wednesday – Jacket potato, prawns and salad
Thursday – Chicken tray bake
Friday – Jerk Chicken and rice – another Slimming World recipe. I first made this a few weeks ago and it was ace. It’s got a good kick to it too.
Saturday – Rob’s epic chilli. We are having a bit of a bulk cooking session this weekend and I have requested this as it’s so bloody good.
Sunday – Roast Chicken with tarragon and all the trimmings.
Do you bulk cook? If so what are your favourite bulk cooking recipes? I think we will be trying to bulk cook something each week now as we seem to have now eaten our way through the freezer stock of our last bulk cook sessions.
