It’s Meal Plan Monday time again! As usual, I am joining in with Katy Kicker’s weekly meal planning linky. It’s a great place to find some mealtime inspiration.
This is my first meal plan in a couple of weeks. Last week was my birthday and we treated ourselves to a couple of takeaways, and other yummy things, so I didn’t bother putting a meal plan together.
This week, however, it’s back to meal planning as normal. I’m still trying to have a couple of meat-free meals each week, and I try to make sure that most are Slimming World friendly (either syn free or low syn). I haven’t rejoined Slimming World, instead, I’m just following the rules from the last time I went.
Here’s this week’s meal plan:
Monday: Spaghetti & Meatballs
Tuesday: Slow Cooker Tarka Dal
Wednesday: Jacket Potatoes with cheese and salad
Thursday: Black-eyed Bean & Veg Chilli
Friday: Pizza and Salad
Saturday: Rob is cooking tonight
Sunday: Roast Chicken
My lunches this week will mainly be made up of leftovers – the dal and the chilli taste even better the next day. I am also planning on cooking a couple of soups (my Slow Cooker Carrot & Coriander soup will definitely be made this week).
I’m in a bit of a breakfast rut at the moment – I end up making scrambled eggs most mornings as it’s quick and easy – so I might try to make a couple of different breakfast recipes this week, maybe breakfast muffins or perhaps overnight oats.
